葡萄酒中の糖類に関する研究(第1報) : ペーパークロマトグラフィーによる検索   :   Studies on Sugars of Wines. (I)

内容 (1)本学部試験醸造, 市販, および某社醸造の葡萄酒19点についてペーパークロマトグラフィーによる糖類の検索を行なった.(2)全試料を通じて同様の結果が得られ, fructose, glucoseおよびsucroseのspotの他にpentoseより更に移動距離の大きい, 顕著なspotが見出された.(3)このものについての報告は未だ見当ないが広く葡萄酒中に存在していると思われるので更に詳細を研究中である.
1. Sugars were detected by paper chromatography on 19 wines, of which, 7 were brewed in our college, 2 were from the market, and the rest were given to us from a wine brewer. 2. We obtained mor or less similar results with all the samples glucose, fructose and sucrose were detected on the paper chromatograms as reported by previous workers. However, a probbaly new, and distinct spot was also formed in all the samples, which moved farther on papor than pentoses namely arabinose, xylose, ribose, and rhamnose. It showed a violet color reaction and showed bright blue fluorescense under ultraviolet light when tested with phloroglucinol reagent of Borenfreund and Dlische. 3. As it is considered that this substances is widely distributed in wines, the more detailed study is now being undertaken.
