内容 トマト果肉から調整されたPEおよびβ-FFaseは, 細胞壁画分に局在しており, 追熟が進むにつれ, 両酵素活性が増大した.この活性増大を説明するのに充分な生体内阻害因子は, どの両分にも, 試みられた方法では存在しなかった. CHI(10^<-4>M)の存在でPEおよびβ-FFaseの活性増大は圧えられた.一方グルコース(1%)下では, β-FFaseのみの活性増大が圧えられた. CEP処理によってPEおよびβ-FFase活性増大が促進された.これらのことから追熟期のPEおよびβ-FFase活性増大は酵素蛋白の新規合成によるものと予想した.
The Development of Activities of Cell Wall bound Enzyme with Ripening and Senescence of Tomato Fruit. H. NAKAGAWA, A. SAKUMA and H. Pectinesterase (PE) and β-fructofuranosidase (β-FFase) of tomato pericarp were associated with cell walls, and the activities of both enzymes were increased with ripening. It was shown that there was not any inhibitors in vivo, which atributed obviously to the increase of enzyme activity with ripening. Glucose (1%) inhibited the development of β-FFase, but not PE. Meanwhile, cycloheximide (10^<-4>M) inhibited the synthesis of both PE and β-FFase. The development of both PE and β-FFase activity was promoted very much by the treatement of p-chloroethan phosphate (CEP). So it was suggested that the increase of activities of both enzymes would be derived from de novo synthesis. It is not yet be clear in tomato fruit, that the working site of glucose and CEP, which include the mechanisms of enzyme synthesis.
