内容 緑白熟期のトマト果実を4°, 33℃および室温に貯蔵し, 呼吸量, 酸度およびガスクロを用いて有機酸の変化を測定した結果1)室温ではクライマクテリックピークをもつ呼吸と追熟がみられたが, 4°, 33℃ではクライマクテリックがみられず追熟は進まず, 呼吸量は低く抑えられた.2)果実のゼリー部と果肉部では, ゼリー部の酸度が高く, 追熟にともなう酸度の減少が大きい.3)正常に追熟した果実に比し, 4℃貯蔵の果実ではコハク酸, オキザロ酢酸の増加が見られ, 33℃の果実では, クエン酸の増加と乳酸が見られた.また33℃処理後, 150, 200日を室温で貯蔵した果実では, クエン酸の減少とリンゴ酸, オキザロ酢酸の蓄積が大きくなりリンゴ酸含量が最も多くなった.終りに本研究に協力を頂いた, 本研究室所属であった清水満二君およびトマト果実を提供して下さった, 農場桑原技官に感謝の意を表します.

Fruits were harvested at mature green stage, and changes of respiratory rate and component of organic acids were determined during storage at 4°, 33℃ and room temperature. Fruits stored at room temperature showed the usual pattern of climacteric respiration during ripening process. However at 33℃, respiratory rate of fruits declined progressively and climacteric peak was not observed. At 4℃, respiratory rate was repressed to low level during storage. Organic acids of fruit were composed of 10-11 kinds of acids and contents of these acid were changed during storage at various conditions. Compared with normal ripening fruits at room temperature, accumlation of succinic and oxalacetic acids were observed in fruits stored at 4℃, and slight increase of total acidity and citric acid were found and lactic acid was detected in fruits stored at 33℃ during storage. Fruits previously stored at 33℃ for 20 days and after 200 days stored at room temperature showed a decrease in citric acid and an increase in malic and oxalacetic acids and constituents of acid was remarkably different. From the relationship between the respiration and changes of components of organic acid during storage, it is considered that the respiration of fruits may be adjustable to the changes of temperature conditions.
