貯蔵温度がトマト果実中のATP・ADP・AMP含量及びGlucose-6-phosphate de-hydrogenase, Phosphofructokinase, Acid phosphatase活性に及ぼす影響について   :   Effect of Storage Temperature on ATP, ADP, AMP Contents and Glucose-6-phosphate Dehydrogenase Phosphofructokinase, Acid Phosphatase Activities of Tomato Fruits.

内容 緑白熟期収穫のトマト果実を4℃, 33℃, 室温及び33℃貯蔵後に室温で貯蔵し, 貯蔵に伴うアデニルリン酸含量変化とG6PDH, PFK, Apaseの活性変動を測定し次の結果を得た.ATP量は貯蔵初期にピークを持ち以後低下したが, 各温度区とも比較的高い値を保った.ADP含量は少なく貯蔵期間中ほぼ一定で温度区による差異も少なかった.AMPは追熟に伴って急激に増大し成熟後一定となった.33, 4℃区は増加は少なかったが, 33℃貯蔵後室温に戻した果実では再び増加がみられた.Piは貯蔵につれて増加する傾向がみられ温度区による差は少なかった.G6PDH活性は貯蔵初期にピークが現われ以後低下した.33℃区では活性が殆んど消失したが果実を室温に戻した後活性が出現し増大した.PFK活性は貯蔵直後より低下したが比較的高い活性を保った.Apaseは33℃で急激に活性が消失したが果実を室温に戻した後再び活性の出現増大が見られた.
The amounts of ATP, ADP, AMP, and inorganic phosphate (Pi) and the enzyme activities of Glucose-6-phosphate dehydrogenase (G6PDH), Phosphofructokinase (PFK), and Acid phosphatase (Apase) were determined at intervals during storage periods of tomato fruits at various temperatures of 4°, 33℃ and room temperature. The ATP content increased during the early period of storage and thereafter decreased gradually during storage at room temperature. The ADP content in mature green tomato fruits was low and roughly constant during storage at all temperatures examined. The AMP content, however, increased rapidly as the fruit ripened. The Pi content increased gradually during storage at all storage temperatures. The activity of G6PDH increased during early period of storage and thereafter this activity decreased gradually during storage at room temperature. On the contrary the amounts of enzyme activities of G6PDH and Apase disappeared during storage at 33℃. However, after the fruits were transfered at room temperature, both enzyme activities reappeared and developed as the fruit aged. The PFK activity decreased during storage at 33℃ and room temperature, although activity remained at low level during storage period.
